Meet the butcher

Rawlings of Cranleigh is a tremendous family-run butcher shaped, based in Surrey. Since its establishment in 1982, the Rawlings family have been offering a magnificent variety of top quality produce and customer service levels. We took the time recently to speak to Robert Rawlings who currently heads up the operation. Read below for Robert's top tips and valued insight stemming from a lengthy career in the trade.

1. It's BBQ season! What are your favourite BBQ cuts?

By far my favourite BBQing steak would have to be tenderized beef skirt (bavette). It's got great flavour and is easy to cook to perfection, even for a novice. If you're looking for some nice barbequed steak, look to get a hold of some good quality bavette and you won't regret it. 

2. Which marinade would you recommend to your customers to use for their next BBQ?

We have a wide range of marinades available that work excellently when barbequing. However, my favourites would be Greek Passion for beef, Garden Mint for lamb, and French Garlic for chicken.

3. What do you think is the best way to cook a rump steak?

I always cook my rump in a frying pan, as hot as you can get it, dry, with no oil. 4 minutes a side for a beautiful crust and medium rare. Don't forget to let it rest as well, this will help the flavour really develop. Nice and simple!

4. Do you think there is a best time of year to buy particular types of meat?

The best time I find to be right now! Spring has sprung and all the new season animals are now in stock. The quality of meat available just now is the best about. 

5. Why do you think customers should feel good about buying Scotch Beef PGI, Scotch Lamb PGI and Specially Selected Pork?

Simple; Scotch is some of the best quality meat you will find anywhere in the world! And lets be honest, if you can keep your supplies from inside the UK why wouldn’t you? The locality and high quality of the product makes it a no-brainer.
