Meet the Butcher
Tom Courts from Burntisland Butchers gives us his top tips in our latest blog post. Have a read below of the fantastic insight from the current proprietors of this long established butchers which was first opened back in 1967.
1. It’s BBQ season! What are your favourite BBQ cuts?
My favourite BBQ cuts are Rib-Eye Steak, Lamb Loin Chops, both Scotch PGI of course, and a nice rack of Specially Selected Scotch Pork Ribs.
2. Which marinades would you recommend your customers using for their next BBQ?
With steak I prefer to let the meat do the talking, just some salt & pepper. I like a good quality full-on BBQ sauce to marinade my pork ribs. I also like a good sweet chilli marinade with any white meat.
3. What do you think is the best way to cook a rump steak?
For rump steak, I'd always cook it either on the BBQ or pan fried. If it’s the BBQ, I only have half the BBQ covered with coals so that I can get a good colour on the steak and then let it finish on the cooler section of the BBQ. In the pan it’s 3 minutes each side on a good heat with plenty butter, then at least 5 minutes resting on a warm plate.
4. Do you think there’s a best time of year to buy certain types of meat?
We often buy certain meats depending on the time of year; Christmas, Burns, Easter etc. I find that Scotch Beef PGI, Scotch Lamb PGI and Specially Selected Pork are of such supreme quality that they eat well no matter what time of year.
